Healthy Recipes - "Eat Well to Fight Cancer":

 

The American Cancer Society applauds the Partnership for a Healthier Carroll County in its efforts to help our friends and neighbors prevent cancer. Are you aware of all that ACS has to offer in prevention and wellness? Here are some of the programs in which you, your family and workplace might participate:

 
 
Become a certified speaker on skin, breast, colon, or prostate cancer.
Join Relay for Life, ACS' signature event to raise funds and awareness about cancer.
Learn about free screenings and community resources.
Involve your worksite in prevention and wellness. ACS offers programming on all aspects of cancer.
 
  Do you get enough physical activity? Learn about Active for Life, a worksite physical activity program based on individualized goals. Do you want to support ACS prevention and wellness efforts through fund-raising? Call us to learn about Daffodil Days, Making Strides Against Breast Cancer, Relay for Life, and other local events. Do you prefer to gather information on the Internet? ACS offers comprehensive information at www.cancer.org. There is even a link specific to survivors.

Break Away from the Ordinary with Flavorful Summer Salads
With the abundance of local fruits and vegetables in the summer, it’s easy to make a meal out of a light, refreshing salad.  If you are looking for some healthy salad and main dish recipes that make good use of this seasonal abundance, check the Centers for Disease Control’s “5 A Day” website5 A Day for Better Health is a national program and partnership that seeks to increase the number of daily servings of fruits and vegetables Americans eat to five or more.
July’s recipe was tested and submitted by Anne Grauel, M.P.H., Health Educator, Springfield Hospital Center.  For over 100 years, Springfield Hospital Center in Sykesville, Maryland, has served the needs of the community through in-patient mental health treatment.  The hospital is pleased to be a member of the Partnership for a Healthier Carroll County.  We are able to offer more health promotion services to the public through this alliance with other local agencies.  Springfield Hospital Center welcomes volunteers and we have a wide range of opportunities for students, adults, and community groups.  For more information, call 410-970-7250.
In this recipe, If you prefer, try substituting other salad greens for the shredded cabbage.  This recipe makes a very colorful, tasty, and unusual salad.  The delicious Spicy Dressing could also be used on many other cold salads.
Cherry and Smoked Turkey Salad
Makes 4 servings, each serving equals two 5 A Day servings

Ingredients:
  12 ounces smoked lean turkey, sliced
2 cups Northwest fresh sweet cherries, pitted
1 mango,* pared and sliced
1 kiwi fruit, sliced
Napa cabbage, shredded
Spicy Dressing
Arrange turkey, cherries, mango and kiwi fruit on shredded Napa cabbage.  Drizzle Spicy Dressing over salad.
Spicy Dressing: Heat 2 tablespoons vegetable oil and 1 clove crushed garlic until hot but not smoking; cool and remove garlic.  Add 2 tablespoons balsamic or red wine vinegar and 1 tablespoon each honey and hot dry mustard** and 1/2 teaspoon each ground ginger and salt; mix well.  Makes about 1/3 cup.
*One large nectarine may be substituted for mango.
**One tablespoon of your favorite mustard may be substituted.
Nutritional analysis per serving: Calories 282, Fat 7g, Calories from Fat 20%, Carbohydrate 42g, Cholesterol 49mg, Fiber 4g, Sodium 668mg.
